Table turnover rate, defined
Table turnover rate is the number of parties seated during a service divided by the number of tables. If a 20-table dining room seats 50 parties over dinner, its turnover rate is 2.5. A related number, table turn time, is the average minutes from a party sitting down to the table being ready for the next one.
How do you calculate it?
Pick one service, count the parties seated (not the guests), and divide by the number of tables. Then work out turn time by dividing the minutes the room was open by the turnover rate. Compare the same service across weeks, because a Friday dinner and a Tuesday lunch might as well be different restaurants.
Where do the minutes in a table turn go?
Break one turn into its parts: waiting to be handed a menu, waiting to order, waiting for food, eating, waiting for the bill, and waiting to pay. The guest owns one of those, the eating. Your floor controls the rest, and on a busy night the waits can add up to longer than the meal.
In a rush the order and the bill stretch first. Both depend on a waiter glancing at the right table at the right moment, and at 8:30 on a Friday that waiter is carrying four plates.
How to improve table turnover without rushing guests

When a higher turnover rate is the wrong target
A fine-dining room is built for long turns and a café lives on quick ones, so chasing a bigger number can hurt. Cut the waits guests did not choose and leave the meal alone. If turnover rises and average spend per table falls, you may be rushing people. Watch both numbers together.
