KDS vs KOT: a screen or paper in your kitchen?

Most Indian kitchens still run on printed KOTs, and many run well. A kitchen display system earns its place once the rush is big enough that paper starts losing orders. The trick is knowing which of those two kitchens you run.

What is a KOT?

A KOT, or kitchen order ticket, is the slip that tells the kitchen what to cook. A waiter or the billing counter enters the order, a thermal printer in the kitchen prints it, and the cook works from the paper. Most Indian restaurant billing software prints KOTs by default. It is cheap, every cook already knows it, and the kitchen needs no screen.

What is a kitchen display system (KDS)?

A KDS replaces the printed ticket with a screen on the pass. Orders appear the moment they are placed, whether a waiter, the counter or a guest ordering by QR at the table sent them. The cook taps to start a dish and taps again when it is ready, and the floor hears about it without anyone walking back to the kitchen.

Where paper KOTs go wrong

Paper tends to fail at 8:15 on a Saturday, when you can least afford it. Tickets stack on the rail in the order they printed, so a two-top that ordered early can sit behind a table of twelve. A slip falls off, gets wet or is misread, and nobody knows until a guest asks where their food is. The printer keeps no record either, so you never learn which dish slows the pass or how long tables wait.

What a KDS adds

A good kitchen display sorts by how long each ticket has waited, not when it arrived, so the early two-top comes to the top on its own. Where a paper KOT is still fine

One cook, a short menu, and a counter where whoever takes the order can see into the kitchen? Keep the printer. Paper is cheap and quick there, and you may never need a screen. What is the full form of KOT and KDS?

KOT stands for kitchen order ticket, the printed slip a kitchen cooks from. KDS stands for kitchen display system, a screen that replaces those slips.

Is a KDS better than a KOT printer?

In a busy kitchen with several tables or stations it is, because tickets are sorted by waiting time, cannot be lost and are timed. A single cook with a short menu can often manage with a KOT printer.
